Variety meats are simply portions of an animal that are used for food. This can include the animal's glands, heart, kidneys, liver, etc.

In past tribal cultures it was thought that eating variety meats gave the individual characteristics of the animal. For instance, someone who ate the heart of a bear was thought to then possess the bear's courage and strength. While that is purely myth, it may take some finicky eaters quite a bit of courage to sample a bite of a liver or ox tail. However, once the delicious taste hits their mouths, they will be asking for seconds. So, don't put off sampling variety meats just because you are nervous about their names. Who knows, one of them may become your new favorite food!
