January 19, 2007, Newsletter Issue #33: Cooked Meat Storage Tips

Tip of the Week

When storing cooked meats, it is best to put them in the refrigerator while they are still fairly hot. This cuts down on bacteria. cooked meats can be stored in the refrigerator for up to five days. Cooked meats can also be frozen for up to three months.

On a side note, if your cooked meat has gravy or sauce on it, you should not store the meat in portions larger than one quart. Separate the meat into smaller containers, if necessary. The gravy or sauce can be drained off and stored separately. For cooked meats that have been stuffed, the stuffing should be removed from the meat and stored separately.
